An assay is a molecular procedure in biology that tests and measures the activity of a compound, such as a drug, on an organism or organic compund such as a group of cells. In addition, when amounts of a sample compund are measured, this is called a quantitative assay. There are many different versions of biological assays; bioassays and immunoassays are examples of the many kinds of specialized biochemical assays.
A binding assay is a specfic assay that measures the amount of binding or affinity between two molecules. Although there are many different assys each with their own protocol or procedures to follow, the basic stating point is to be able to measure how much binding occured while sometimes not knowing how much how much strating compounds or molecules you had in the first place.
